Travel for the cuisine of these lands allows you to experience the Sierra Norte de Madrid with all five senses. Each season offers different options that must be tasted, as the spoon dishes and meats of hunting in winter, mushrooms in spring and autumn and summer salads of field with the Russell, noshes, asparagus... and of course the produce from the garden or meat from the North Sierra of Guadarrama at any time of the year.

Local meat 100%
The traditional way of life was based on livestock (vaccine, caprine and ovine, Although they were reared pigs for slaughter) and continuing with that inheritance, The Sierra Norte is distinguished by its meat, great quality and with protected geographical indication "Meat of the Sierra of Guadarrama". In this case, beef produced from to Gredos through Lozoya Somosierra. Breeds such as avileño, trays and Limousin which feed on the high mountain pasture, characteristic of our region.
Dairy life / Authentic taste
Using different types of milk (cow, sheep and goat), incomparable cheese are produced, yoghurts and dairy with great style and taste, they are the result of a very careful process.
Enjoy our Earth
To a lesser extent agriculture has conditioned a few ways of life based on the exploitation of the resources to be considered an economic activity, social and environmental. Thanks to it is supplying food, they kept the soil and preserving biodiversity, ensuring sustainable management of natural resources. Today we can find many gardens lapped by ancient gullies that today lead the water from the mountain slopes to pick tomatoes, Eggplant, Zucchini, potatoes, strawberries, Chickpeas, beans... until beans, a very demanded variety; or the but, a variety of Apple that is characterized by its exquisite taste and pleasant smell. Awesome everything that produces our mountain land.
We must not forget that the Sierra Norte is also watered by the river Jarama Vega, and that offers us products linked to the vineyards at Torrelaguna, Patones, Torremocha de Jarama and Venturada predominating grape airén and tempranillo; on the other hand in the fleece and the Espartal occurs grape garnacha and Jaén. Some magnificent wines are created with these exquisite grapes.
The King of our food
La Vega also produces oil, made with olives cornicabra, Chamomile and something of subalpine, presenting an original flavor, interesting, and with an intense aroma of ripe fruit.
Delicacies from our bees
These, together with other complementary activities such as beekeeping, they were the basis of mountain food. Honey, of different types, Thanks to the botanical variety of the Sierra Norte (Romero, thyme, Lavender, mejoranas, jaras, Sage, Thistle, Heath...) they make our sierra possess valuable bee.
And if sweet talk, long is the story that precedes them. The sweets were tied mostly to the festivities of the sierra. The famous French toast, delicious doughnuts, creamy fritters or the peculiar puches among others, they were a real delight that even today you can try dessert due to the aforementioned recipes that have been passed from generation to generation.
